Very interesting! I can safely say that I have never encountered a pesto mac and cheese, or any mac that looked less like a mac – in the best way, of course.
Let me reiterate: interesting. I definitely did not anticipate the pesto and cheese flavors blending well, but I was mistaken. To be specific, I think that it was the note of garlic in the pesto that served as a sort of flavor liaison to the pilsner cheese sauce.
Middle-of-the-road, leaning ideal – Nothing further to report.
Not the cheesiest mac known to man, but I wouldn’t consider that a fault in this case; the pesto adds an entirely different flavor profile to the mac that can’t be overlooked in importance. I’d like to add that Lansing Brewing’s pilsner cheese is delicious as hell, and I love that they use it in their mac. Overall, the marriage between the pesto and pilsner cheese made for a pretty unique mac & cheese dish.
I would say that the texture was just okay, mostly because of the chicken; I don’t want to say that it was “squishy” because that sounds incredibly juvenile, but that’s the best way I can describe it. On the positive side, the penne was cooked perfectly and the bacon, as almost always, added a nice textural variety.
One more time for the people in the back: interesting! I had some severe doubts about this one, but I can tell you that I’m now a converted believer in the concept of a pesto mac and cheese. Overall, Lansing Brewing is a pretty sweet joint with a great menu and solid selection of signature beers that are definitely worth checking out.
