~ Crawfish Mac ~

I can only describe this mac as bad-ass. The noodles are as colossal as the serving size itself, and it’s topped with a black and red mixture of what I believe is paprika and pepper. This is the kind of mac that has a “mom” heart tattoo on its shoulder. It might even have a Harley parked out back. I was pleased to see a spin on mac that was less artsy and delicately culinary, and more bold and in your face.
Flavor: ⭐️⭐️⭐️⭐️⭐️
As unique as its curb appeal. Pepper jack the most frequent in macs these days, and that’s a blunder; Blind Bear definitely has the right idea. The spicier elements balance so well with the fresher, mellower tastes of the crawfish and asparagus in the mac, making for a really awesome dish.
Creaminess: ⭐️⭐️⭐️⭐️⭐️
A velvety, lovely sauce, with plenty of it to go around.
Cheesiness: ⭐️⭐️⭐️⭐️⭐️
Like I said – big fan of the pepper jack.
Texture: ⭐️⭐️⭐️⭐️⭐️
The textural elements seemed to form a perfect spectrum, starting with the bit of snap from the asparagus and crawfish, moving down to slight chew to the al dente pasta, and finally to the silky smooth cream sauce. Sounds pretty great, right? Oh, and did I mention that this was my first time eating crawfish?
Overall Experience:
I’m a sucker for the speakeasy vibe, especially when excellent food and drinks are involved. They do things pretty uniquely at Blind Bear, and their mac was no exception. Loved it! Though I may be biased as the speakeasy’s new neighbor, its Main Street location really adds to its great energy; I think it’s slowly becoming our go-to watering hole.
